Joust Beach Bar and Restaurant owners Joy and Justin Stedmances
are brimming with pride following recognition in the 2006 New Zealand
Beef and Lamb Hallmark of Excellence Awards.
Two dishes from the Joust menu were praised for their preparation
and presentation by judges in the recent awards.
Joust’s lamb shanks, with celeriac mash, sautéed
potatoes, bacon and choux vert, finished with caramelised onion
jus, won praise by assessors for the pleasing presentation and
marriage of flavours.
“The lamb was flavoursome and innovatively served, perfectly
cooked, rested and tender”.
Judges were also pleased with the colourful, attractive presentation
of the beef meal, a char grilled sirloin with king prawns on a
roasted mushroom tart, with herb-scented hollandaise, and commented
on the overall execution of dish components and that both dishes
were very enjoyable and well deserving of the Hallmark award. |
